Green Smoothie Challenge

I have a confession - lately, I don't really like eating vegetables. This is something that's hard for me to admit because I love vegetables and I've always had the reputation in my family for being the one to remind everyone to eat their veggies. Okay, it's not that I don't like eating them but given the choice, I would choose something else. I think that it's a combination of things that has led to this from not having the time to cook to a lack of inspired recipes to just losing the taste for vegetables. At the same time, I know that I'm not getting all the nutrients that I need in my daily diet and that something needed to change.

So, I was really excited when I saw that Amanda over at Run to the Finish was doing a 30-day Green Smoothie challenge for the month of June. It was just the kick in the pants that I needed to get back on track. As I read through the benefits of green smoothies that Amanda listed, I found myself nodding my head.

  • Need more veggies in your diet but don't want to go vegan? Yes
  • Struggling with low energy in the afternoon and need to be focused? Yes
  • Your skin has been breaking out more often or your hair has lost its luster? Yes
  • You're increasing the length of intensity of your workouts and you need better recover? er...getting there.
In a smoothie-form, nutrients are also more readily available for your body to be absorbed. However, I was worried that my intake of sugar would also increase but I learned from Bex and Mike Perrine that the addition of greens in a smoothie helps to slow the absorbtion of sugar.

So June 1 (ohmygoodness it's June already???!?) - Green Smoothie Challenge is on. I will admit that I am traveling home today so I will likely resort to drinking a pre-made green juice. But I am looking forward to stocking my fridge full of goodies to experiment with.

I had no idea that the smoothie form greens slowed the absorption of sugar! What a great takeaway - so thank you! You are the one who first brought the challenge to my attention - so thank you. Looking forward to these next 30 days of green!

I still have yet to try a green smoothie! they scare me for some reason. And I like to chew my food more than drink it, too, so that's part of it. But I would love to try and good concoctions you come up with!!

I think this is something Chris can get into and would be really good for him to try. I have a texture thing so I will just stick with my veggies. Thankfully, I like them plain or fancy and don't seem to get tired of them. Hopefully I didn't just jinx myself! ;-) Good luck & safe travels home!!

I remember watching you make your Egg Beater Green smoothie and it totally inspired me! Used some egg beaters in mine this morning. My son watched me make mine this morning and he was very intrigued. I think because it was green.

I'm glad to be doing this and I will be looking to you for some advice along the way! For some reason, that tidbit about the slowed absorption of sugar made me feel better. I'm assuming that it's true but haven't looked into it further.

Thank you! I normally like my veggies crunchy and cooked and yummy but seriously have just been having a hard time eating them lately unless we eat out. Then, in that case, they probably aren't the most healthy for me anyways. Plus, I love smoothies so figured that this would be an easy way to get them in!
